The truth is that the older you get, the less melanin your body produces. So, in normal conditions, with the age people get grey or white hair. As people get older less of tyrosinase (the enzyme that breaks apart the amino acid tyrosine as an important step in the manufacture of melanin) is produced so less melanin is made.
